Knowledge Tree Menu
A lot of thought and planning has gone into the menu process. Using the USDA Beanstalk program guidelines and current child nutrition suggestions, we have come up with selections that we feel are appropriate for young children.
Example Snacks- 2 food groups will be served
Bananas and Graham Crackers
Fresh Baked Muffin and Juice
Granola Bars and Milk
Fresh fruit and Crackers
Fresh Veggies and Crackers
Yogurt and fruit or crackers
Example Lunches- At least 3 food groups will be served. Minimum amounts.
1/2 C milk
1/2 C Vegetables or Fruit
1 serving of grain (pasta, rice, bread) or Protein (chicken, beef, pork, nuts)
Day 1
Peanut Butter and Jelly on Whole Wheat bread
Applesauce
Carrots
Milk
Day 2
Chicken Nuggets
Mandarin Oranges
Corn
Milk
Day 3
Macaroni and Cheese
Peanut Butter Crackers
Mixed Veggies
Milk
Day 4
Spaghetti with meat sauce
Fresh Apples with Cream Cheese Apple Dip
Milk
Day 5
Fish Sticks

I love serving home cooked meals, but that isn't always possible. Frozen foods, such as chicken nuggets and fish sticks are chosen carefully with your child's nutrition in mind. I choose foods with little or no processing whenever possible. I also try to make low-fat selections. I serve fresh fruit and veggies whenever possible, but substitute with frozen when fresh is unavailable. If your child has food allergies, let me know and alternate selections will be offered. For example, I do not serve peanut butter to children under 2. I substitute cream cheese for peanut butter when possible or will make something like a turkey sandwich instead of a peanut butter one.
The above menu is just a sample of some of the selections served. I love trying new recipies and seeing what new creations I can make to excite young palattes! I love suggestions and new recipes so feel free to share!
